Salted Butter Popcorncicles
3 tbs Sugar
1 1/4 cups Milk
3/4 cup Cream
1 1/2 cups Popped Popcorn
A generous sprinkle of Salt Flakes
Into a saucepan, over medium heat, put butter, salt and popcorn. When the butter has melted, add rest of the ingredients and wait for it to come to a simmer. Simmer for a minute, then take off the heat and transfer to a bowl. When the mixture has cooled down, cover the bowl with cling film then refrigerate for at least 4 hours (overnight is best).
Strain through a fine sieve (the butter will have hardened on the surface) then pour into popsicle moulds. Freeze until hard. To garnish before serving, brush with hot water to melt the surface slightly, then cover with popcorn bits.
Yield: 6 Popsicles
