Oatmeal-Flax Pancakes with Creamy Apple Sauce

Oatmeal-Flax Pancakes:
2 cups old-fashioned rolled oats
1/2 cup whole-wheat pastry flour
2 tbsp flax seeds
2 tbsp raw sugar
1 tsp baking powder
1 tsp baking soda
Pinch of salt
2 cups of milk
2 eggs
1/4 cup canola oil
1 tsp vanilla extract

Creamy Apple Sauce:
4 apples
1/2 cup water or apple juice
1/4 cup tahini
2 tbsp apple butter or maple syrup (or 1 tbsp of each)
1 tsp ground cinnamon
1/2 tsp ground nutmeg

In a large bowl, measure the dry ingredients for the pancakes (oats, whole-wheat flour, flax seeds, raw sugar, baking powder, baking soda and a pinch of salt).

In a small bowl, whisk together the wet ingredients for the pancakes (milk, eggs, canola oil and vanilla extract).
